The Turkish cuisine is absolutely amazing and is famous around the world. Maybe a lot of people are familiar til kebabs, but in my opinion its the vegetable dishes usually cooked at home that are the real winners!
My Turkish boyfriend, Ender, grew up with the most delicious meals prepared with both real nutritious food as well as love! One of his favorite winter foods is bulgur with swiss chard or pazı as it's called in Turkish, and we are lucky to have him sharing these recipe with us. It's simple, easy to make and only contains real foods. The dish is high in protein as 100g of bulgur provides 12g of protein! Bulgur is also high in dietary fibers. Chard is very effective in strengthening bones. It also plays a role in making hair look vibrant and teeth stronger. It contain vital vitamins such as calcium, magnesium, vitamin c, vitamin a, and iron.
We usually eat this as a lunch or dinner and it can also be used as a side dish eaten together with other foods.
Turkish chard with bulgur
The recipe is for 4 people if served as a main dish. Total time: 30 min Preparation: 15 min Cooking: 15 min
Ingredients for chard with bulgur
1 bundle of chard
3 dl bulgur (washed)
1 medium size onion
3 cloves of garlic
1 tbs tomato paste
1/2 dl olive oil (preferable organic virgin (YES! It has a huge impact on the taste as well as nutritional values).
1 tsp salt 1 tsp black pepper
Hot water
Procedure for chard with bulgur
Chop the onion finely and press the garlic
Cook onion and garlic with olive oil for 5 minutes on medium heat
Add tomato paste to the pot and fry until the smell comes out
Rinse your chard and chop it up finely and add it to the pot
Rinse your bulgur and add it to the pot
Add enough water to cover everything
Reduce the heat and let it cook for 15 minutes with he lid on.
Stir occasionally and check if you need to add more water
It's ready when the water is absorbed and the bulgur is soft and eatable
Season with salt and pepper
